    First of all, it's not clear to me at all why so many reviews of Matador have been filtered by Yelp. Take a look at them - they appear to be legitimate to my eyes. Now, to Matador. My initial thought the first time I visited was, "oh great, another burrito place, just what we need" But my initial apprehension was quickly swept away. The ingredients are quite fresh. They offer a lot of different sauces, amongst which the queso stands out - if you like cheese sauce, do not pass this up. The sweet potatoes are a nice, slightly healthier alternative. And I love the ghost sauce, although it is way too hot for more than a squirt. Many people have already commented about the very cheap bottled beer. As far as I can tell they are basically selling local microbrews below cost, or at least near cost. I cannot normally buy a 6-pack anywhere in town for less per bottle. Finally, the staff gets a huge high-five. They have always been extremely friendly and helpful, suggesting a new combination or offering an unexpected special. The events that Matador sponsors like the chili cookoff and others are also a welcome addition to the somewhat sleepy southeast part of town.

    Price on food was a bit higher than i thought, food was pretty good not any better or worse than the bigger chains. staff was super friendly and its a local business so for sure give it a try!

    Sometimes, it's not always about being the first. Sometimes, it pays to wait it out; to wait for the dust to settle, for the smoke to clear, for the novelty to wear off and assess the reality of the situation. This is key to writing restaurant reviews. All too often writers are jumping at the bit to be the first one to publish a review of the newest, latest and greatest restaurant that just opened. Many times I receive emails asking if and when I'm going to publish a review of a recently opened restaurant. "It's the talk of the town! You should be there!" they say. All in due time, dear readers, all in due time. Patience is a virtue. This review is the perfect example of why it pays to wait. I don't know about you all, but it took me some time to get my bearings straight in every job I had, even the times I worked directly with and serving the public. On day one, I was not my best. On day fourteen, I was better. On day thirty, I was getting the swing of things. Hopefully, we all get better with time. And Matador Mexican Grill has. Matador uses local beef from Loyd Farms, delivered directly from the butcher. They purchase produce from Grant Family Farm and are using many local craft beers in their salsas. They've also just purchased a tortilla press to begin making their tortillas in house. This place is as local as it gets with a fantastic emphasis on freshness. They also have a sister location, Toro, on East Elizabeth in Campus West. With the smaller location, the menu is a bit smaller as well, but still serving the same fresh flavor. After leaving, I thought about how our visits during the months were drastically different and how Matador is getting better with time. Are they the best burrito in town? No, but they trying, working with flavors, changing recipes and constantly aiming to improve. Just like in all of the different jobs/careers I've had throughout the years, I got better and more efficient with experience. Matador is doing just the same.

    I eat at Matador a couple of times a week even though it is about a half hour away. Their beer selection and prices are amazing. The events that they sponsor, such as the beer dinners, are always fun. The food is reminiscent of the food I grew up eating. Everyone gets to customize their order with a variety of bean and meat options and tons of hot sauces to choose from. My one complaint is that I love hot green chile, but theirs tastes as though they use another chile - not just green - to add the spice. Find them on Facebook to see daily specials, contests, and coupons. They also have a punch card, but the food is a great value to begin with. I recommend the grilled chicken or the pork with queso in just about any fashion, although I am partial to the burritoito, the bowls, and the enchiladas. Oh, and did I mention that the staff will go out of your way to make sure you enjoy your visit?

    I've been excited to try Matador for a while. I love that they are locally owned and that they are strong supporters of the local craft beer industry. Unfortunately, I was really disappointed in my food. I got what I'd normally order at qdoba or chipotle; rice bowl (I chose cilantro lime), with chicken (I chose their honey-chipotle? Option) topped with fajita veggies, lettuce, pico, and guac. They make the fajita veggies fresh to order which would be a nice touch except they assembled the rest of my food as soon as I ordered. The result? My bowl sat there getting cold for about 5 minutes while It waited for the veggies which were then dumped on top. I had to ask the guy to microwave it because I don't like my food tepid warm when I start to eat, I like it hot! The dish itself was bland. Really lacking in flavor compared with other burrito bowls I have at the chain competitors. So that was a bummer. My food was 2-star. I bump them to three-star cuz my husband was satisfied with his fajita veggie burrito, though he said next time he's get a burrito w/o the veggies. (He had to wait, too,) He loved the local beer options which were very reasonably priced! Best part he said. The service was also friendly. I'll give this place one more try and pick something else like a straight up burrito. Hopefully I'll have better luck next time.

    Great burrito made by local people. I enjoy supporting local businesses and instead of going to one of the popular chains I opted to try out Matador. I really liked the fact that they had more rice selections (includes Spanish rice option) and salsa options. Overall the burrito is comparable to the big chains and I definitely enjoyed it. I would like them to clean up the presentation of the ingredients a little bit but despite the messy look the food was great.

    Matador is a locally-owned Chipotle-style fast food Mexican place. We've been going here regularly since it opened. Inexpensive, fast and tasty. The ambiance is nothing to write home about, but the food is. Seasonal, creative and varied sauce choices make meals special. It's obvious the owner loves the place, as he's almost always working! Cheap bottles of beer, too! I'd give Matador five stars if it weren't for the fact that there's lot of employee turnover, which means sometimes I get something I didn't order.

    We've come here a few times now. It doesn't look like much, but the food is great, cheap and fast. 2.79 pints all the time. We can get a dinner for 2 under 20 bucks, which is rarity these days. It's like a Chipotle-style burrito bar, but it's a local family business. It's easy to get to as it is off harmony. As ex-New Mexicans, this place is our fave for fast, affordable, and tasty.

    If you've ever lived in Florida, you know about Tiajuana Flats. I felt this place was similar only not as good. It's a counter service style burrito and taco place. The shredded chicken and sweet potatoes were tasty but the refried beans, rice, and other toppings didn't have much flavor. Mostly I tasted the cranberry hot sauce I had, which was good. The queso was too watery for the chips. It was more like a cream or milk than a cheese. I like that they're local but the location is not convenient for me to make repeat visits. If I'm out that way, I think I'd rather go to Pablo's Pizza.

    seriously, this place spells Awesome. The service is fast and they actually smile at you. The food is really good and oh, the hot sauces are freaking amazing. If you like pork green chili, you gotta smother your burrito. Fish tacos, fish burritos are both really good and the pork is absolutely delicious. Give 'em a try if you haven't. You won't be sorry.

    In town on business and couldn't face another night of room service. Yelp to the rescue! The food here is awesome and one burrito is enough for 2 meals. As if I stop eating it. The guy who made my burrito was super friendly and guided me through the umpteen million choices I had for my burrito.

    When a friend of mine said that Matador was her favorite burrito shop in town, I wondered if "local" could really make much of a difference. This is a category where I think the national chains -- Qdoba and Chipotle -- largely meet expectations. We also have another local spot (La Luz) that makes a pretty mean steak & potato burrito, though they are better known for fish tacos. What could Matador possibly bring to the table? Well, plenty, it turns out. Let's start with their commitment to local sourcing, e.g. produce from Grant Family Farms. House-made hot sauces -- I happen to like the fruit-pepper combos, like the mango habanero ... they also have some based upon local brews. Speaking of beer, there are plenty of interesting local microbrews (yes, beyond Fat Tire!) available, should you wish to imbibe. It's a small thing, but I love that they offer sweet potatoes as one of their fillings -- certainly a more nutritious option than rice or regular potatoes. Finally, their staff is always friendly and efficient. I don't know that I would drive too far out of my way for "just a burrito," but if I'm looking for a quick bite after a movie at the Cinemark or am driving back into town from I-25 and just want to pick something up, Matador would certainly be up there on my list.

    Matador can be crowded on occasion during rushes but that is expected from a place that serves such good food for such a great price! This is a great place to take your friends or just grab a beer and a burrito on your own (they have TV's for that) They have a great selection of high quality meat (try the pork!), and the hot sauces range from mildly delicious to please put me out of my misery (careful with the scorpion!) They absolutely have something for everybody no matter what your heat level is. The management loves their beer! Ask for a recommendation! sub $2.00 for their bottles and sub $3.00 for their drafts! Do you still need more reason? One final note! The pricing is excellent! You will leave with a few dollars left over to spend at Coldstone right next door. That is only if you aren't full from the smores quesadilla!

    Some of the food was great, some of the food was not good. I'll give it another shot before making a final verdict. The manager was friendly, the guy at the cash register needs to focus more on his work. The conversations going on in the room were inappropriate and certainly distracting, not a place I would recommend you go with your significant other.

    Breakfast was not worth eating. Eggs were dry and 10 minutes old according to Matador. I would have guess 20 minutes or 30. I made the mistake of stopping even though place was empty. I will not do so again.

    Awesome burritos, fish tacos and the like. Fresh beers on tap at all times. They even serve great breakfast. If you haven't been to Matador, check it out. After going to Matador, you will think twice before going to Qdoba or Chipotle. You will not be disappointed.

    Yummo! What can I say? It's a tradition on grocery day to come here for a cheap craft beer (or 2) and veggie tacos at the end of the day. Plenty of options for every appetite/diet. I will say, if you are vegan do not order the green chili or soup (which I was told by an employee is made with green chili) because the green chili is made with butter. It's a bummer I had to give those up, but the grilled veggies keep me coming back!

    The steak quesadilla was very tasty and inexpensive considering the portion size (I ate it for two meals). The chips were fresh; the salsa was so-so...it could have been from a jar. I would definitely go back! Yummy spot!

    Good food from a local place. The staff is great. The daily specials are a good way to go for savings. Their beer is WAY less expensive than anywhere else. The also have local beers on tap. If you want a quick Mexican place pass on Qdoba and come here.

    I like the build your own burrito thing, so this place was good for me. The different sauces and toppings are a win. I would come back. They didn't have a menu for the beers so I had to settle for what i knew instead of picking something different, but no biggy.

    This place sucks. I tried asking the guys behind the counter why this place is better than Qdoba, cafe Mexicali and chipotle. All he could say was that they had fresh ingredients and that they were locally owned. The guy was straight up stupid. The burrito is HALF the size of any burrito in town. I would not come here.     This place blew me away. Tasty burritos, we had the steak queso and small shrimp. I would like to see them use un-breaded shrimp tho, other than that they were well made with fresh ingredients. Reasonable prices when compared to the other fast burrito places. This place makes and sells their own hot sauce, 4 usually local draft beers for dirt cheap prices, and a cooler full of bottled beer for even cheaper than the drafts. The'll even give you a taste of the beer if you like. Customer service is top notch. Fast service and attentive to detail. I asked for a side of their honey habanero sauce and it was super tasty and very spicy, sweet heat as i like to call it. I had Funkwerks raspberry provincial on draft, yum.

    Honestly, I went for the cheap beer and to hang with the boys, they did that right how can you complain about good boulder beer for less the $2. We also got chips and salsa, the chips were good enough nothing special. The salsa sucked I tried it a few times then gave up and just ate chips, which worries me about the rest of their food if they can't even get salsa right.

    I love everything about Matador! Its local, its high on flavor, and has dirt cheap beer (and a hell of a selection)! I would recommend Taco Tuesday, Two pork soft tacos, all the fixings finished off with honey habanero (homeade) salsa!! TO.DIE.FOR. NO better burrito roller deal in town!

    5-stars for friendly staff. 4.5 stars for their food. This place is a great local burrito place and blows away the competition for a quick and delicious meal. The very best part of Matador is their beer selection and price. However limited their taps are (4-5) they always carry amazing beers. We've been visiting the Matador for 5 years and will continue to go back.

    As a native Californian, I find that there aren't as many good burrito places to pig out like the ones in California. This place is the one place that comes closest. Their selection of hot sauces, to a hot sauce fiend like me, are wonderful. They're a small business that I have no problem supporting. Keep putting out delicious food guys!

    Stopped in for a breakfast burrito while I was in town. First off, the man who made my order was wearing gloves (which is great) but also rang me up wearing the same gloves (which is totally not sanitary) then afterwards went right back to prepping food wearing the same gloves. (that is just gross after having his hands in the till). My veggie breakfast burrito consisted of eggs (which were rubbery and tasted 2-3 days old) potatoes (which were over cooked and hard as a rock) and my choice of beans (I picked pinto and they were bland). I didn't ask for anything else except salsa which they had about a dozen to choose from. I chose to go with a ghost pepper and jalapeño choice from the hot and hottest selections. The salas were decent and I liked the wide selection. The only good thing about this place was a George Costanza poster in the ladies room which made me laugh. Sadly I would 100% never step foot into this place again.

    Ditch the corporate world of burritos and thank me later. No really! Matador is by far the bomb! I live about 6 miles from matador with tons of other options in town and I always end up here. They are more than reasonable for a cheap dinner for two but, I don't even factor this in because, the quality and fresh ingredients keep us craving matty!

    I've been coming here for over a year now, and I must say this is the bet burrito spot on northern Colorado! I would suggest this spot simply because of the beer selection! Under $2 for bottled local microbrews as well as 4 taps which pour a pint for under $3. I have yet to find a beer price which is this good. The staff are great the owner Paul is a great guy. I eat here at least once a week. They make their own hot sauces, which are pretty serious. Buy a pint glass and bring it in for cheap refills!

    I have been to this place once and it was good. It's set up like Subway. You go to one side of the counter, give them your order and move down. Add things as you go. If there isn't a line it shouldn't take long to get your food. I'd recommend it.

    Matador is my favorite burrito place in town. It is not a chain. They have fun events like a chili cook off, pumpkin carving, and Facebook contests. I like the vegan burrito with sweet potatoes, guacamole, cilantro rice, black beans, and grilled veggies. My favorite sauce is the medium spicy Honey Jalapeño sauce. Make sure you look at the full list of sauces because they all are good. Be warned: the hot is hot. The other special thing about Matador is their great selection of draft beer. I can always find a new local beer I want to try. The folks at Matador know their beer.

    Locally owned businesses deserve our interest and support. Of course, our interest needs to be reciprocated! We would never find ourselves returning back to a business that didn't seem to want our business or attempt to cater to our specific needs. This may be wrong if you LOVE shopping at Wal-Mart and other big-box stores and corporate franchises which guarantee your consumer annonimity. Perhaps you don't like to think too much and would rather cartoon advertisement tell you how to spend your money. If this is the case, then you'll never experience the awesomeness of The Matador Mexican Grill. This locally owned restaurant encourages its customers to engage with their local communities and facilitate our shared prosperity. Staying true to this concept is the golden thread that is woven through their business model, which is evident in everything you get in their establishment. The food is from local farms and is never pre-packaged, frozen or any way disguised as fresh. They also proudly offer a strong selection of beers from nearby breweries. As for the quality of the food, the proof is in the pudding, as they say! They have an excellent variety of sauces that each transform similar dishes to very different peices of culinary art. Any foodie I know would be very satisfied with their attention to the details of each dish. It's worth noting that this is a fast-casual dining experience, and as such one should understand that the plating or food's appearance is not nearly as important as the what's on the plate. By focusing on what's important these guys will be doing well ad infinitum. I appreciate and support this restaurant and would highly reccomend anyone to give this place a try!

    So although I really do like this place, I have a huge issue with being offered something in my burrito and not being told that it costs extra. Especially for a small amount. Please DO NOT offer if you are not going to inform. For a little drizzle of their 'queso' it is a dollar extra! A great way to fix this would be "would you like to try our queso for a dollar more?" Five stars went to three.

    We tried this restaurant with a gift card I had won. I was not impressed at all, the food looked like it had been sitting out all day (it was a Saturday so I assume they would of been busy.) The food was just not good, I hate maybe 2 bites and tossed it. It's a good thing I had already gotten it for free.

    Matador is essentially the reincarnation of Taco Del Mar, but without the limitations of the TDM franchise. Lots to like, but at the end of the day, it's really hard for burrito joints to really differentiate themselves. What I liked - Local produce -- they use Grant Farms and local butchers for their meat - Recycle bin for beer bottles - Tasty marinade on the steak - $1.41 for all bottled beer (including new belgium brews!) What was so-so or not-so-good - The steak came out of a bin, and it looked more like a stew. Luckily it tasted way better than it looked - Limited salsas - still ran me $9 for a burrito and a fountain soda drink Again -- I digtheir use of local ingredients and would love to support local entrepreneurship. I also like this better than Big City Burrito, and Chipotle, and maybe a bit more than Qdoba. But still, it's a burrito joint, and there are only so many ways to differentiate.

    Very tasty indeed! Been here for lunch...large portions...good helping of protein and usually I have to take some home. Very nicely flavored. Happened to go there for a breakfast burrito on a day I really, honest-to-goodness needed someone to hand me a burrito and coffee in the am. Score "1" for Burrito score "0" for coffee!! DANG! no coffee...sadness...had to run over to Rocky Mountain Bagelworks for coffee - they offered me a burrito....been there, done that...just hand over the caffeine pleeeeze....... rest of the day was ok, in case you were wondering. I digress, this taco place is good. I would recommend. I will be back. Skip the stupid ice cream place next door and get you some REAL food! er, a coffee thermos thingie would be appreciated by us breakfast burrito types.... thanks in advance.. you lost one star due to no coffee...........see how this works?? COFFEE!! ok, I'll stop now. :-)

    Always a treat to eat here, and I never miss the chance when I'm in the area. The food is excellent and the in-house hot sauces are truly incredible. Try combining the honey jalapeño with the mango habanero and the thai tortilla, it's life-changing. On top of everything and perhaps above all else, a wide selection of local microbrews available for $1.50 apiece? That fact alone merits my five stars.

    We love Matador! In a nutshell, cheap, friendly, delicious, lots of options. My husband and I are especially big fans of their under-$2 bottled beers. They have quite a selection, including many local beers, and they must be selling them at cost! We get out of there for about $20 for 2 entrees, a chips & salsa, and 2 beers or sodas. I highly recommend the shrimp enchiladas. Crunchy battered goodness!

    Came here excited for a new burrito joint in town... I was sadly disappointed. This place is simply bland Taco Del Mar with a new paint job and name. The food was cold and tasteless. The salsas bland. I turned to the Habanero salsa seeking some heat- and while it had good color, sadly there was no taste here either. This was my second visit- and it will be my last. Not yummy.

    Nice little taco joint. The crew was very friendly and accommodating. A taco is relatively expensive, but the enchilada combo plate was reasonably priced and not too bad. A bit better than average. But the major plus: the Mango hab sauce and the Cranberry hab sauce! NOM! If I hadn't been for the hot sauces, it would only get 2 stars, but the friendly staff and sauces definitely brings it up a notch

    They have several tortilla choices including spinach and jalepeno cheddar. When you order a veggie burrito, they grill the veggies fresh so they aren't sitting around all soggy. They have sweet potatoes, refried, black, and pinto beans, guacamole, homemade salsas, homemade hot sauces. A ton of food and options, very reasonably priced. !!!!!!!!!!

    Excellent food, low prices, great selection. Flavorful, honest to goodness food. While it appears to be a straight-up taco/burrito joint, the food would be quite at home on the table of any respectable Mexican restaurant. I had shredded beef enchiladas in a delcious creamy poblano sauce and they were delicious. My wife ate the specialty burrito, which was even better, and my daughter was ecstatic about her nachos. The huge array of salsas and sauces were great fun to try, but be warned: Their idea of "medium" is what much of the world considers quite hot. Noodles and Co. has lost some business... we have a new favorite take out spot.

    Place doesn't look like much from the outside, but it's a gem of a burrito joint right there along Harmony. Only place I could find in town with dozens of great salsas to choose from and great beer prices and selections. Staff is worth 6 stars, but food is probably in the 'pretty good' range. Prices are also the best for burritos in town.

    As I'm always searching for extreme heat, I came across Matador shortly after it opened. Their sauces are made locally and have expanded as time goes on. I'm a huge fan of the Ghost Ranger sauce on everything they serve up. There are plenty of other choices if the Bhut Jolokia powered sauce is not your cup of tea. My wife usually has a Taco Salad as the bowls are baked and the ground beef is excellently prepared and not greasy at all. I lean towards fish or ground beef taco's myself. Oddly enough, I enjoy the chips with the mildest sauce they have, the chip salsa, as the flavor of it is excellent also. Matador has a few local brews on tap and plenty of bottled choices for a mere $1.41 each. Locally owned and operated, I try to support local businesses and have found them a fine choice for lunch or dinner. Can get a bit busy during the noon hour but it's worth the wait.

    The guys at Matador make their own hot sauces. They are pretty creative. Using local brewed beer and other novel ingredients they always have some new flavor to try. Their maple jalepano sauce and breakfast burritos are my favorite. The place is small but not intimate. A bit out of the way but it's worth the trip!

    Pretty boring. Really nothing special at all. Tried the 'gourmet' tacos. I had the chicken taco which was bland. My wife had a fish taco. Not bad - but certainly not great. Maybe we should have tried the burritos. I see no reason to go back.

    Delicious burritos at phenomenal prices! We got two large burritos, two beers and chips w/ salsa for only $18! Great meal!

    Matador is one of my favorites. The Wednesday Smothered Burrito special is awesome and cheap. You also cannot beat $1.41 beer!

    Good, cheap Mexican food; variety of beers at a low price; easy to get to. Convenient if you're heading to Cinemark for a flick.

    I will go back again but I don't think I will make a point to go back out of a sudden craving. This place is much in the Chipolte and Qudoba vein and they admit that but the prices are better as they claim. I ordered cheese enchiladas and they were decent. The sauces much like the places I mentioned above when it often comes to fast food Mexican food is that it lacks the spice as you may expect with a independently owned Mexican restaurant. I also ordered some sopapillas which were dipped in cinnamon and sugar and that was pretty yummy but in the end the spice that I am usually accustomed to just was not there.

    Yum. 2 things separate this place from the chain burrito joints: the prices and the staff. The fish tacos are awesome as is their hot sauce selection. They post coupons pretty regularly from their Facebook page. Enjoy!
